Understanding Food Allergies

Any food protein entering the circulation in sufficient quantity can produce symptom patterns resembling serum sickness. If antigens make it into the bloodstream, they can stimulate the production of antibodies. These antibodies can then combine with complement in the blood to produce circulating immune complexes (CICs) which can be detrimental to overall health.

It is well established that food-related allergies cause a variety of illnesses in humans and other animals. Approximately 2% of adults and about 5% of infants and young children in the United States suffer from immediate (IgE) food allergies each year. Roughly 30,000 individuals require emergency room treatment annually as a result of food allergies. In addition, over 60% of Americans needlessly suffer from hypersensitive reactions to foods and food additives.

At present, there is no cure for a food allergy. A food-allergic patient must avoid the food to which he or she is allergic in order to be symptom-free. The timing and location of allergic reaction to a food are affected by digestion. For example, an allergic person may first experience a severe itching of the tongue.

The onset of IgE symptoms may vary from a few minutes to an hour and are mediated by histamine.

Delayed reactions usually take hours or days to present symptoms and manifest themselves in chronic diseases such as IBS or eczema.

Delayed food related allergies begin in the gastro-intestinal tract when the intestinal lining becomes hyper-permeable.

This problem is known as “leaky gut syndrome”. Medically, it is defined as an increase in permeability of the intestinal mucosa to partially digested protein macromolecules, antigens and toxins. Recently, Zonulin, a protein found in the human gut, was discovered at the University of Maryland, by Dr. H. Fasano. This protein was originally discovered in high concentration in patients with acute Celiac Disease. It destroys or opens the tight junctions between mucosa cells of the gut, which causes an increased permeability and an increased absorption of partially digested proteins.

The immunological reaction to these proteins in the liver initiate chronic food sensitivity. An increase in intestinal permeability or leaky gut is a common and very real problem. If the gut is not healthy, neither is the rest of the body. Escalating food allergies are among the many problems caused by a leaky gut. However, gas, bloating, abdominal pain, indigestion, alternating constipation and diarrhea or irritable bowel syndrome may not be all that’s going on in the body. When the gut lining becomes inflamed or damaged the normal function of the gastro-intestinal tract is disrupted.

Normally, the body recognizes and absorbs only amino acids, glucose and the short chain fatty acids, but with a leaky gut, large food antigens are absorbed into the body.

The body’s defense systems attack and the result is the production of antibodies against once harmless, innocuous foods. IgG antibodies and immune complexes are formed in the bloodstream and circulate.

Blood contaminated with partially digested food coming from the gastro-intestinal tract travels through the liver where most immune complexes are removed. If circulating immune complexes pass the liver filter, they may cause disturbances in many of the body’s organs.

The combination of antibody with complement in the blood stream is a circulating immune complex. Immune complexes attach to CR1 receptors of red and white blood cells. Individuals have varying numbers of CR1 receptors.

In most cases, CICs are simply removed from circulation by macrophages in the liver and spleen prior to triggering a cascade of events which may cause multiple symptoms and possible tissue damage.

Circulating immune complexes that are not removed can activate a complement cascade. This is a circulating system of 25 proteins which interact to produce a variety of molecular defensive weapons. There are two main functions of the complement cascade. The first is defense against bacteria, viruses and other pathogens. Antibodies covalently bind C3b which starts a chain reaction that triggers the complement cascade. The function of immune complex is to lyse cells by activation of this complex, assemble into pores on the cell membrane, and disrupt the cell membrane or cell walls.

The net effect is that sodium and water flow into a cell causing the cell death. In addition, complement generates cytokine inflammatory mediation. Clearly, activation of complement can have severe consequences causing tissue damage in any organ. Circulating immune complexes damage the integrity of capillaries which trigger inflammatory events.

A classic model of immune complex induced pathology is the Arthus reaction to the small pox vaccine. These large insoluble complexes with complement excite inflammatory responses in target tissues, i.e. smallpox vaccinations that cause residual skin eruptions then scarring. Clinical examples of this are rheumatic heart disease and glomerulonephritis.

The key is to measure the presence of allergen-specific immunoglobulins IgG and immune complex. Immune complexes are indicative of allergic reactions. C3b is the common junction of all three complement pathways. Immune complexes are missed with a straight complete IgG (IgG 1-4) test measuring these antibodies. Food Sensitivities

Many people get a stomachache, headache, or other uncomfortable symptoms from eating “healthy” foods. These symptoms can and usually do develop into many chronic conditions.

For reasons we do not fully understand, for some individuals, eating a specific food causes the immune system to stand up and fight; yet the immune system loses. Consequently, you become ill. The illness you have is the immune system’s response to a certain food.

The tendency to be sensitive to certain foods can be either genetic or caused by the constant and repeated exposure to the same foods. Since we tend to eat the same foods over and over our present symptoms continue and new ones start to develop.

Many people suffer from food sensitivities and don’t realize it. Rarely can we figure out on our own that something we ate yesterday might be causing today’s migraine. Many people needlessly endure years of illness with numerous chronic illness and symptoms (arthritis, asthma, migraines, cluster headaches, bowel problems, eczema, fatigue, heartburn, hyperactivity, and many others) without even knowing that delayed food sensitivities are causing these conditions.

Various books and articles have been written over the years about food intolerance. Interestingly, authors who have addressed this issue in the last 150 years all agree on the symptoms caused by food intolerance. These symptoms include arthritis, eczema, irritability, mental confusion, and diarrhea.

What authors do not agree on is which specific food causes which particular problem. Some say it may be corn, others point to wheat while still another talks of sugar and dyes. We suspect that they are all correct…. for some patients. It is our experience that each susceptible individual has his or her own particular profile of foods to which he/she is sensitive.

Your personal immune response system is what determines which foods give you trouble. The key is to identify which foods your immune system is reacting to and eliminate them from your diet. 

 

Sinusitis

Chronic sinusitis is the swelling and inflammation of the air-filled spaces (sinuses) behind the forehead, cheeks, and eyes, which continues for a long time or keeps coming back. The sinuses are openings in the bones around the nose. Four pairs of sinuses connect to small openings in the nose area. Normally, air passes in and out of the sinuses, and mucus and fluid drain from the sinuses into the nose.

Sinusitis is usually due to allergies or infection. When sinusitis keeps coming back or continues for a long period of time, it is considered chronic. Causes of chronic sinusitis include: Blockage in the nose from allergies, nasal polyps, nasal tumors, or a deviated nasal septum, dental infections such as tooth abscess, allergy to the aspergillus species or fungus, and food sensitivities.

“I have suffered from a long list of symptoms for many years. Sinus infections was one of the worst ones. I had started seeing Dr – on advice from my cousin who had worked with him and seen miraculous results. He was amazed to find out that I had this long list of symptoms for years. Asthma

Asthma is a bronchial spasm or narrowing of the tracheal bronchial tree due to inflammation. This inflammation may be temporary, related to an inhalation of various antigens like pollen, dust, or mold spores. In addition, it may be complicated by infection, which causes further narrowing of the bronchial tree and the typical diagnosis here would be asthmatic bronchitis. In many individuals, who have been well treated with desensitization for the various pollens, molds, and other inhalant causes, they may have still have persistent symptoms and must take bronchial dilators and topically inhaled steroids to control their symptoms.
Often, food sensitivities are a complicating problem and contribute to the bronchial spasms and narrowing. This relationship of food allergies to asthma is a consistent finding in those individuals who have what is called non-allergic allergy. What this means is that the individual has negative IgE skin testing or RAST testing, but appears to be an allergic individual. This individual almost always has delayed food sensitivities as a complicating factor in their chronic asthma and bronchitis illness.

Arthritis

Degenerative joint disease that involves the erosion of cartilage that covers the ends of the bones, and is causeIs a dd by: trauma or injury, or a protein defect that makes up the cartilage, although it is most commonly related to the wear & tear of aging. Osteoarthritis rarely develops before age 40, but affects nearly everyone after the age of sixty. Currently over 45 million Americans suffer with Osteoarthritis.

Rheumatoid Arthritis (RA):
Is a type of inflammatory Arthritis. RA is an auto-immune disorder in which the body’s immune system improperly identifies the synovial membranes as a foreign substance, and begins to attack the membranes resulting in inflammation, pain, and swelling. Currently, 2.1 million Americans suffer from RA, most are under the age of forty, and over two thirds are women.

I started getting lots of pain in my joints it would be in my arms, shoulder and hands my feet my ankles it would be everywhere. Rheumatoid arthritis is a crippling disfiguring disease my fingers where bent over sideways. I actually had to have surgery to correct them I was a flight attendant and I could not even hang up a coat.

Now I can walk and exercise, and now my feet don’t hurt at work. I am out on the town when I am on layovers with everybody else walking and just having fun. I really feel a blessing to have found a treatment that releases me from my pain. It really encourages me that my life is just beginning and going in another direction. ADD/ADHD

Typically, what is seen in an individual who has ADD, is an individual who has difficulty attending to tasks, can’t concentrate, and can’t learn properly. And yet, in my experience, is very bright and intellectually gifted. Most of these individuals are now treated with psychotropic drugs. Some, even with antidepressants, and the more severe the symptoms the more drugs they are now prescribed. Almost all of these children can be controlled by other means; by identifying and avoiding certain foods that they may be sensitive to. I have not seen one young child with these particular problems that has not had a delayed food sensitivity as the root cause of their problem.

Food allergies in children are on the rise and this contributes to many different problems. It is often hard to differentiate between these delayed onset react and immediate IgE allergy. Through our research we have found that the symptoms of ADHD and ADD are almost always mediated by the delayed pathways, which include IgG and Immune complex reactions. Usually, there are many foods contributing to those problems so it is not as clear cut as an immediate IgE response. You can have a delayed reaction to any food protein so that means any food that is ingested has the possibility of triggering a delayed sensitivity, therefore, any food can lead to ADHD or ADD. 

Acid reflux

Gastroesophageal reflux disease, GERD, better known as acid reflux, occurs when the lower esophageal sphincter (LES) does not close properly and the stomach contents leaks back, or refluxes, into the esophagus. When refluxed stomach acid touches the lining of the esophagus, it causes a burning sensation in the chest or throat called heartburn, or acid reflux. The fluid may even be tasted in the back of the mouth. This is called acid indigestion. Occasional heartburn is common and does not necessarily mean one has GERD. If heartburn occurs more than twice a week, it may be considered as GERD.

The main symptoms of GERD are persistent heartburn and acid regurgitation. Some people have GERD without heartburn. Instead, they experience pain in the chest, hoarseness in the morning, or trouble swallowing. You may feel like you have food stuck in your throat or as if you are chocking or your throat is tight. GERD may also cause a dry cough and bad breath. Sometimes GERD can cause serious complications. Inflammation of the esophagus from stomach acid causes bleeding ulcers. Additionally, scars from tissue damage can narrow the esophagus and make swallowing difficult.

Irritable Bowel Syndrome

Irritable bowel syndrome (IBS) - characterized by a group of symptoms including cramps, abdominal pain, bloating, constipation and diarrhea is a disorder that interferes with the normal functions of the large intestine resulting in considerable discomfort and distress. It is so common it occurs in 1 in 5 Americans, and is one of the most common diseases diagnosed by doctors. Research suggests that people with IBS seem to have a colon that is more sensitive and reactive than usual to a variety of things, especially certain foods.

The immune response behind this problem is the antigen-antibody reaction that form immune complex and bind with complement. Once the complement cascade occur inflammation occurs very aggressively in any area of the body. When this occurs in the GI Tract on a regular basis you can develop IBS and many other symptoms associated with this problem.

The systems were in a lot of intestinal distress to put it nicely Gas for want of a better word. I used to say if Goodyear would bring their blimp over I would take care of its needs. It got to the point that I would hesitate to go out with company because I could not control it and it was very embarrassing and painful. I went to the hospital for it and the Doctors told me that they could not find anything wrong, but I still had the problem.

It was not until I changed Doctors when he told me that I need to have a food allergy test. Well I did and it changed my life. I am no longer embarrassed to go out in public. And the exposure to the Sage system and their ability to do and to come up with results with a computer printout of all the foods that I had problems with was just amazing. CFS & Fibromyalgia

What is CFS and Fibromyalgia and what are the symptoms of this disease

Fibromyalgia is a rheumatic syndrome characterized by widespread and often debilitating pain in fibrous tissues, muscles, and other connective tissues. It affects 2-4% of the population and is found mostly in women between the ages of 20 to 50.

Fibromyalgia Symptoms include:

  • Tender and sore areas of the body (shoulders, back of neck, lower back, hips, shins, elbows, and knees.
  • Fatigue
  • Migraines and recurring headaches
  • Inability to focus
  • Depression
  • Anxiety
  • Irritable bowel syndrome
  • Rashes
  • Night sweats
  • Inability to sleep
  • Chronic aches of the body and face
  • Inability to accomplish everyday tasks

Fibromyalgia

I have had severe body pain fibromyalgia type pain for years. And I have gone to medical Doctors and specialist and was getting nowhere except getting more medications. Two years ago I was clawing my way upstairs at home because I could not walk I was so weak and in so much pain. I also had some liver dysfunction from all the medications from over the years that I had taken.

I decided to get my blood tested for food sensitivities, after that my life changed.

I am now loving life again I feel that I been giving a new lease on life, two weeks ago I hiked up Chimney Rock to see the waterfalls and back down again. And like I said two years ago I could not walk up my own stairs I was crawling.

IC

Interstitial Cystitis or IC is a chronic inflammatory condition of the bladder wall. Its cause is unknown. Symptoms are similar to a urinary tract infection, also known as common cystitis. Unlike common cystitis, interstitial cystitis is not caused by bacteria and does not respond to conventional antibiotic therapy. Interstitial cystitis can affect people of any age, race or sex. It is, however, most commonly found in women. Studies estimate that there may be more than 700,000 cases of interstitial cystitis (IC) in the US. However, this is considered an underestimation because interstitial cystitis is often undiagnosed or misdiagnosed. It is important, to note that interstitial cystitis is not a psychosomatic disorder nor is it caused by stress. There are very few treatment options for people suffering from interstitial cystitis.

 In early or very mild cases, frequency is sometimes the only symptom. In severe cases the frequency can be up to 60 times in 24 hours. Interstitial cystitis can cause the sensation of having to urinate urgently, and may also be accompanied by pain, pressure or spasms. The pain can be in the pelvic region, bladder, urethral or vaginal areas. However, the absence of pain does not exclude the diagnosis of interstitial cystitis (IC).

Hives

Hives are raised, often itchy, red welts on the surface of the skin. They are usually an allergic reaction to food or medicine. When you have an allergic reaction to a substance, histamine and other chemicals are released into your bloodstream, causing itching, swelling, and other symptoms. Hives are a common reaction, especially in people with other allergies like hay fever. A hyper-sensitive immune system can also trigger hives as a reaction to certain foods.

 The symptoms of Hives are swelling of the surface of the skin into red- or skin-colored welts (called wheals) with clearly defined edges. The welts may enlarge, spread, and join together to form larger areas of flat, raised skin. They can also change shape, disappear, and reappear within minutes or hours. The welts tend to start suddenly and resolve quickly. When you press the center of a red welt, it blanches (turns white).

I kept getting hives almost every week, and couldn’t find out why. I went to several allergists and had a RAST test done, but none of the foods and treatments seemed to work. Until I had the Sage Test, I was still getting the hives. Once I got rid of all the foods they told me to eliminate from my diet, I haven’t had any more outbreaks, and feel so much better. Dermatitits

Contact Dermatitis is an inflammation of the skin caused by direct contact with an irritating or allergy-causing substance. Reactions may vary in the same person over time. A history of any type of Allergy, but especially food allergies increases the risk for this condition. Irritant dermatitis, the most common type of contact dermatitis, involves inflammation resulting from contact with acids, alkaline materials such as soaps and detergents, solvents, or other chemicals.

 Allergic contact dermatitis, the second most common type of contact dermatitis, is caused by exposure to a substance or material to which you have become extra sensitive or allergic. The allergic reaction is often delayed, with the rash appearing 24-48 hours after exposure. The skin inflammation varies from mild irritation and redness to open sores, depending on the type of irritant, the body part affected, and your sensitivity. Having answers was the best thing that happened to me, eliminating what is bad for me made such a difference, not only don’t I have migraines anymore, but my Dermatitis is also gone and I feel my immune system can ‘work’ on ‘protecting’ me from other sicknesses. I feel healthier…

Crohn’s Disease

One of the more serious chronic food related diseases is Crohn’s Disease. People with this disease have abnormalities of the immune system. The most common symptoms of Crohn’s disease are abdominal pain and diarrhea. This disease usually begins in young people with frequent diarrhea (irritable bowel syndrome) and progresses to inflammatory swelling of the digestive tract. Crohn’s Disease affects men and women equally and seems to run in some families.

 Normally, the initial treatment for most people with Crohn’s Disease is through the use of drugs that control inflammation. Drugs that suppress the immune system are also routinely prescribed. However, these drugs can cause serious side effects, including greater susceptibility to infection, nausea, vomiting, heartburn, diarrhea and headache. Additionally, these drugs only provide temporary relief from the effects of Crohn’s by treating the symptoms instead of the underlying cause of the disease. More importantly, use of these drugs does not necessarily prevent the need for surgery. While surgery can help Crohn’s Disease, removing some of the damaged bowel, it cannot cure it and recurrent surgery can lead to malnutrition and eventually death. I was actually a teenager when I had Crohn’s Disease; it was very painful. Through the years I have been hospitalized several times. It never occurred to me that foods could be a major factor that could control Crohns. Really, if you look at the entire picture and what it has done for me, it has changed my life dramatically. I don’t feel weak and tired I don’t have the day to day symptoms of Crohns anymore. I go with no medications for Crohns at all. I have been on this diet for three years so it is not a short term fix. Just a blood test can change your life.

Autism

Migraines

Migraine headaches are often caused or triggered by delayed food allergies. A few years ago a study showed that 85% of migraine sufferers experienced migraine relief after eliminating specific foods.

Migraines can be traced to an overactive nervous system some research suggests, while others believe migraines involve an overactive immune response to food. Some people believe that in addition to foods, stress or muscle tension can trigger migraines. Others believe that sensory triggers like light, smells or motion bring on the migraine headaches.

Research has shown (pg119) that one of the main triggers of chronic migraines are food sensitivities. These delayed reactions to foods trigger an inflammation response that can lead to the migraine headache. These reactions are the result of IgG antibodies binding to the food protein and immune complex formation that activates complement. This complicated mechanism can cause many problems incuding migraines, and other chronic headaches described below.   

Chronic Headaches most commonly fall into three types, sinus, tension & cluster headaches.

Sinus headaches are caused by inflammation of sinus tissue, either due to an infection or delayed allergic reactions, such as those caused by foods. The pain is usually a dull ache, it can become intense. A sinus headache is usually being triggered by something you ate in conjunction with an active sinus infection. Migraines can be misdiagnosed as sinus headaches and vice versa.

 

Tension headaches are caused by muscle contractions around the neck, scalp and jaw. The pain from a tension headache often is described as a dull pressure, or as if a tight headband were strapped around the head. Unlike migraines, a tension headache generally causes pain only on one side of the head. A tension headache affects both sides of the head.

 

A Cluster headache is unusual: it is one of the few types that affect men more at women. A cluster headache causes severe pain around the eyes, temple, forehead and cheeks. Attacks last between 30 to 90 minutes, and can occur one to six times a day. A cluster headache can occur for weeks or even months at a time, and suddenly stop, only to reoccur months later. Migraines

I went to my Doctor for headaches and migraines. He sent me to an orthopedic where they gave me all sorts of tests including CAT scans and MRI.  After the testing the orthopedic surgeon said you will be a great candidate to have a bone chip of your hip and fuse your neck. After my wife and I had our first child a friend of mine fortunately gave me the name of this new Doctor. I told him that I can’t even hold my baby girl because my neck hurt so bad, do you think you can help?

He asked me what kind of pain, I told him it was like cluster headaches they are short but intense then they are gone. I will have them for a month or more with different intensities. He asked me if I have ever been tested for food allergies or food sensitivities? I am sure that someone had told you about food related headaches, I said I have but without much understanding. My Doctor then said well, let us find out if food is the problem. And boy did we find out that was the problem, you can’t believe the difference between before and after. My quality of life has improved so much, thanks for everything.
